JOB SUMMARY

The Cook will accurately and efficiently prepare, portion, cook, and present a variety of hot and/or cold food items for various meal periods to include Breakfast, Lunch, Dinner, and Special/Catered Events.

This position will be working a rotational schedule of 3 weeks on /3 weeks off and 12-hour shifts at a remote camp located on the North Slope of Alaska. Flights to/from Anchorage and to the job site will be paid by the company. Covered meals and lodging at the job site. Point of hire: Anchorage, AK.

The general responsibilities of the position include those listed below, but DUS may identify other duties depending on business necessities and client requirements.

JOB QUALIFICATIONS

High School Diploma, GED or equivalent

2 or more years of experience in high volume food production.

Food Worker Card required or able to obtain.

ServSafe certification preferred.

Previous remote site experience preferred.

Able to proficiently speak, read, understand and write English

ESSENTIAL FUNCTIONS

Under minimal supervision, independently performs advanced cooking duties in preparing food items to be served to customers.

Prepares, portions, cooks, and presents a variety of hot and/or cold food items for various meal periods (Breakfast, Lunch, Dinner, Special/Catered Events) as assigned.

Prepares foods by operating a variety of kitchen equipment to measure and mix ingredients, washing, peeling, cutting and shredding fruits and vegetables, and trimming and cutting meat, poultry or fish for culinary use.

Provides the highest quality of service to customers at all times.

Tastes products, reads menus, estimates food requirements, check production, and keep records in order to accurately plan production requirements and requisition supplies and equipment.

Produces small to large batch goods using advanced and full range of classical and contemporary cooking, plating and garnishing techniques.

Follows complex recipes and/or product directions for preparing, seasoning, cooking, tasting, carving and serving soups, meats, vegetables, desserts and other food items.

Selects recipes per menu cycle, prepares bakery items, receives inventory, moves and lifts foodstuffs and supplies and prepares meals for customers requiring special diets.

Cleans and sanitizes workstations and equipment.

May assist with the supervision of kitchen personnel.

Must follow all DUS, client and regulatory rules and procedures.

Complies with all DUS HACCP policies and procedures.

Reports all accidents and injuries in a timely manner.

Complies with all company safety and risk management policies and procedures.

Participates in regular safety meetings, safety training and hazard assessments.

Attends job specific training programs (classroom and virtual) as designated.

Advanced knife skills required.

Maintains high standards for work areas and appearance.

Must comply with any dress code requirements.

Must be able to work a flexible schedule that may involve various shifts, weekends and holidays.

Attends work and shows up for scheduled shift on time with satisfactory regularity.

May use production software to enter pre- and post-production data software.

May take inventory, and/or enter inventory into the production software.

May perform other duties and responsibilities as assigned.

WORKING ENVIRONMENT

The employee will be required to live and work in a remote and confined workspace for extended periods of time and exposure to work assignments consisting of twelve-hour days and able to work day or night shifts as required. The majority of the work is performed in a remote setting with a wide variety of people in differing functions, personalities and abilities. There may be a lack of immediate access to critical medical services as well as urban community services.

The employee’s work requires routine walking, standing, bending and carrying items. Applicant will be required to successfully complete a post-offer pre-hire physical and Functional Capacity Exam.
