Your Leadership   

Ensures leadership coverage in all areas is fulfill e d and supports on all key areas of the culinary division.

Supports all chefs on the hiring , training, and direct supervision of the resorts culinary division.

Evaluate performance; lend guidance, leadership, and discipline as needed to the kitchens  

Write, maintain and update all menu specifications, recipes and pictures, production forecasts, and ensure same are being followed.

Review and schedule culinary staffing so that proper coverage is maintained while maintaining payroll costs in line

Assist with payroll, ordering and inventory for all kitchens.

Ensure the department abides by all safety and sanitation policies 

Monitor to ensure proper receiving, storage (including temperature setting) and rotation of food products so as to comply with Health Department regulations, including coverage, labeling, dating, and placing items in proper containers of kitchen and service.

Check to see that all equipment in the kitchen is clean and in proper working condition, review daily cleanliness practices with culinary team and keep up with daily cleaning schedule

Perform additional duties as assigned that may be outside the scope of duties, based on business needs

Must Haves   

Three years of p revious c ulinary supervisory or management experience

Excellent verbal and written communication skills 

Microsoft Office products; Word, Excel, PowerPoint, and Outlook 

Embrace Technology – continually learn, adapt, and master to new operating system

Knowledge of implementing new food concepts and menus

Ability to work a flexible schedule including weekends and holidays 

Luxury hotel experience, a plus

Physical Requirements   

Ability to stand and exercise mobility for extended periods of time during your scheduled shift 

Ability to lift and carry up to 50 pounds regularly and for extended periods during the shift 

Ability to push and pull food serving equipment and carts weighing up to 200 pounds on a semi – regular basis 

Ability to work in extreme temperatures like freezers (-10°F) and kitchens (110° F)
