Responsibilities and Duties
1.) Directs and supervises daily team operations and assigned duties:
– Makes out daily work sheet and assigns extra duties in afternoons or evenings.
– Assigns break times for adults and minors.
– Handles call-ins and covers Team Members for absences or breaks.
– Observes and records daily business needs so the scheduling supervisor can adjust the labor force as needed for maintaining costs.
– Directs assignments to be carried out as assigned on daily production sheet.
– Listens to voicemail and responds to emails on a daily basis
2.) Plans and sets up the daily food production operation for hot and cold food areas:
– Plans quantity of foods to be prepared based on daily business projection.
– Assigns the supply of foods for the preparation cooks.
– Decides the appropriate steam table set-up for daily and special dishing situations.
– Makes necessary adjustments in regard to dishing, preparation, and menu items as needed.
– Sets up preparation areas for afternoon and evening business changes.
– Ensures coolers are stocked during morning shift for evening business projection.
– Coordinates special parties under 50 with the Host/Hostess.
– Coordinates special parties over 50 with the Food Production Manager.
– Responds to Server inquiries regarding the preparation of foods.
3.) Supervises training of new Team Members and maintains positive communication between all kitchen Team Members:
– On-the-job training for new Team Members by instructing the methods of sanitation, food safety, quality, preparation and serving of food.
– Once trained, communicating the standards of performance to new and present Team Members, and maintaining those standards of quality.
– Communicates any changes or pertinent information to Team Members as needed.
– Develops & maintains good communication between all food preparation Team Members and service Team Members so the food operation flows smoothly and efficiently.
4.) Plans and monitors Team meals for all Team Members:
Controls the keys to stock room and coolers.
Checks coolers and confers with meat department for available food items.
